Gastronomie 491, the new high end epicerie in the UWS opened its door in the UWS on Columbus near 83rd St.

Nicole Ahronee is a food lover and she picked just everything you want to buy: from Richart chocolate to Pan Bagnat.

Martin Johnson is the one who curates the cheeses (he runs as well The Joy of Cheese, a company that offers classes). Martin loves his job and he is unbeatable in cheeses.

He is the one who came up with this deal (I did the tasting):

One Camembert Jouvence Fermier: as close to Normand camembert as you can get in the United States. The key is that the milk is thermalized (a process that kills the harmful bacteria while retaining the enzymes that promote cheese flavor). This is full of root vegetable flavors and dense mushroom-ey goodness.

One half pound of Marcel Petit Comte: the finest Comte available in NY. These wheels are selected from the Jura’s leading producer by two experts at ageing cheese and brought to North America by Jason Hinds of Neal’s Yard in England and Daphne Zepos, the owner of the Cheese School of San Francisco. It’s smooth flavor is highlighted by a sophisticated exposition of nuts and fruit.

One third pound of Tomme D’Aquitaine, an aged goat’s milk cheese made in Graves and washed in Sauternes as it matures. The aging of the cheese is handled by the master affineur Jean D’Alos.

As we strongly think these cheeses can’t be eaten with a bagel, the deal includes one Amy’s French baguette.

The customer can substitute any of these cheeses with: Tomme De Savoie or St. Nectaire, both classics aged by Jean D’Alos or Spring Brook Raclette from Reading Vermont.
