Mathias grew up in the Alsace region of France and missed it so much that he had to open his own restaurant in NYC!
La Tarte flambée (in Alsatian flammekueche, in German Flammkuchen) is an Alsatian dish composed of bread dough rolled out very thin in the shape of a rectangle (traditionally) or circle, which is covered with fromage blanc or crème fraîche, thinly sliced onions and lardons. It is one of the most famous gastronomical specialties of the region.
You have to try the traditional one or the gratinée (with added gruyère cheese), the Forestière (with mushrooms instead of lardons), the Alsacienne (with munster, and Mathias uses the real one…you can smell it!), the Biquette or Provencale.
The Sweet Tarte flambée is to die for!
